About Ten seconds yunnan rice noodle
The Story Behind Crossing-the-Bridge Rice Noodles Every bowl of Yunnan Crossing-the-Bridge Rice Noodles carries a story. According to a beloved legend from Yunnan, a scholar once spent long hours studying on an island away from his home. His wife would cross a bridge each day to bring him meals. Worried that his food would become cold before he could eat it, she found a simple solution — keeping the soup covered with a layer of oil to help retain its heat. She began serving the hot broth separately from the ingredients. When it was time to eat, fresh slices of meat, vegetables, and rice noodles were added to the steaming broth, cooking quickly while preserving their freshness and flavor. This thoughtful way of serving rice noodles became known as “Crossing-the-Bridge Rice Noodles” (过桥米线). Today, it remains one of Yunnan’s most beloved dishes — a dish that represents warmth, care, and the simple idea of making a meal special for someone you love. At Ten Seconds Yunnan Rice Noodle, we are proud to share this tradition with our guests in Carrollton. Every bowl is our way of bringing a little taste of Yunnan to Texas.
Course 1
Tomato Soup Rice Noodle with Beef Slices
Ripe tomatoes are simmered into a rich, sweet-and-tangy red broth served in a sizzling stone pot. Swirl in thin slices of marbled beef until just tender, then add shrimp, ham, egg, wood ear and fish tofu from the side tray. It’s warm, comforting and loved by all ages.

Course 2
Green Sichuan Pepper Fish Fillet Rice Noodle
Delicate white fish fillets are poached in a clear broth lifted by fresh green Sichuan peppercorns. The aroma is herbal and refreshing, with a light tingle that never overpowers. With sweet corn, peas, carrots, ham and quail egg, this bowl is clean, fragrant and light.

Course 3
Golden Hot & Sour Rice Noodle with Fish Fillet
A glowing golden broth, tangy and gently spicy, poured over tender fish fillets. Add fatty beef rolls, shrimp, quail egg, wood ear mushrooms, fried tofu puffs and garlic chives, then slide in the rice noodles. Every bowl is loaded with toppings and bursting with bright, appetizing flavor.

Rich Broths, Authentic Yunnan Flavor
Broth is the soul of every bowl at Ten Seconds. Our kitchen starts early each day, slow-simmering pork bones into a base that is mellow, clean and full of depth. From there we build more than ten broths, including tomato, mushroom, kimchi, mala, pickled pepper and collagen-rich fish maw. Paired with fresh meats, crisp vegetables and springy rice noodles, every bowl is hearty, nourishing and made to order.
Silky poached chicken is sliced and laid in a pool of bright red chili oil, then finished with crushed peanuts, fresh chilies, scallions and cilantro. The sauce is spicy, nutty and a little sweet, soaking into every tender bite. A cool, bold starter before your hot noodle bowl.
Mouthwatering Chicken
